So I LOVE to bake – If I could bake for my friends and
family every day I would. A few months
ago I found this most delicious Lemon Cake Recipe which is now a crowd favorite... It is so yummy and easy to make and too good not to share! x
LEMON YOGHURT CAKE
Ingredients
- 13/4 cups sugar
- 2 eggs
- 1/2 tsp. salt
- 2-3 tsp. of lemon juice
- grated rind of 2 lemons
- 3/4 cups oil
- 1 cup of vanilla yoghurt
- 2 cups of self-rising flour
Syrup
- 100g caster sugar
- juice of 2 or 3 lemons (depends on how tangy you like it)
- Zap in microwave to dissolve, about 30 seconds.
Directions
- In a bowl, mix rind, oil, eggs and sugar with
a fork.
- Add remaining ingredients and combine well.
- Pour into greased ring tin and bake at 180 C for 30 minutes.
- Take out and poke holes all over with a skewer and pour over the syrup.
Sometimes if I am making it extra special I will also ice it with a standard lemon icing sugar/butter icing. YUM!
